Chocolate Chip Cookies
Ingredients:
- 2 sticks of softened salted butter
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 1⁄4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 bag of semi-sweet chocolate chips
Instructions:
- Preheat oven to 375°
- In large mixing bowl, add two sticks of butter, brown sugar, white sugar, 2 eggs, and vanilla extract
- In a separate bowl mix the baking soda, baking powder, and salt with the flour
- Mix ingredients in large bowl until appear smooth
- Slowly add flour mixture in segments — pour some in then mix, then pour more and so on
- Once fully mixed add half a bag of semi-sweet chocolate chips
- Put dough in refrigerator to cool for 30 min
- Take dough out of fridge and place equal size chunks spread out on cookie sheet
a. Do not mold the dough into balls - Place into the oven for 5-8 min
- Take out of oven when ready and leave to cool
Sweet Potato Mug Cake (vegan/gf)
Ingredients:
- 2 tbsps cacao powder
- 1 tbsp coconut flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup baked sweet potato
- 1/4 tsp vanilla
- 1 tbsp maple syrup
- 1 tbsp almond butter
Instructions:
- To bake the sweet potato, preheat an oven to 350° and put it in for around 40 minutes until soft. Make sure to poke holes in the potato with a fork so that steam can get out.
- Add all ingredients to a mug and mix with a fork. If the batter is too thick, add a splash of non dairy milk like oat or almond milk.
- Microwave for 1 minute and 30 seconds to 1 minute and 45 seconds.
- Top with a handful of dark chocolate chips and microwave for an additional 15 seconds until they are melty.
